Here in Mexico there are tons of street vendors, some of them ride around on tri-cycle carts selling different foods or wares. There is one that would be PERFECT for LC's, if not for the corn!
ELOTE!
(elote means corn

The man comes riding his trycicle around the neighborhood yelling "EEELLOOOOOOOTTTEEEEEE" (ay-low-tay) and people come running - because they're INSANE! And because the elote's gooooood.
The ingredients go like this -
A steaming hot cup of field corn (they don't know about sweet corn here)
A dollop of butter (dollop means big)
A dollop of mayo
A squirt of mexican crema (like sour cream, a little less sour)
A squirt of nacho-type cheese
A generous sprinkle of finely grated paresean cheese
(lime juice if you want it)
and then your choice of chile (salsa)
Warm or HOT.
I was aaammmaaazzed when I first moved here and saw this insane concoction but how could you NOT love it?? Ingredients 2-5 are....I don't know, a Paula Dean wet dream? Just crazy.
Now though, I of course don't eat it, but I kinda wish the elote man would also carry arond some green beans so I could share in the fun!
