Default Super Easy Salmon Patties

HI Everyone,

I was searching my pantry for lunch today and the pickings were slim. I decided to make some salmon patties and they turned out amazing.

I always buy Raincoast canned Salmon from the health food store. It is wild caught, skinless and boneless. I love it, it is more expensive but I don't worry about eating it (too much mercury etc)

1 can salmon broken up
1 egg
1-2 T of cream
pinch of granulated onion, garlic, dillweed and pepper
Enough Grated Parmesan cheese (green can variety) to kind of hold it together although it will still be wet.

Mix all together (make sure to thoroughly mix the egg, I beat it before adding)
Heat olive oil and butter in a skillet and form wet mixture into patties using your hands. Make sure oil is nice and hot and then add them in.

Makes 3 nice sized patties, cook each side until brown (about 3 minutes).
I topped them with a dollop of mayo.

Delicious!!!

I love salmon patties too, but I can't have milk products. So I use coconut flour or flax seed meal, egg, green onions and misc. spices. I didn't think about dill though, I'll have to try it!

I love them best warmed and served up over a salad.

I've been eating a lot of salmon lately, I found a good brand at Costco and it is delicous!

So what's the brand at Costco that's so delicious? Enquiring minds want to know (especially since most canned salmon has a distinctly fishy smell I have to work at to get past).

What kind of 'smell' would you like your salmon to have, Jude? Beef perhaps ....

It is just the Kirkland brand. It smells like fish but tastes very mild, more mild than tuna, IMHO.

Island girl, try the Raincoast traders salmon, it is delicious and no strong fishy odour. I am not a huge salmon fan but I do love this one.

Oh, thanks, I have tried Raincost (how couldn't I? ), especially their smoked salmon and tuna products, but there's a big price for their top quality...pity!
