Default Zucchini Tots

I found a recipe that looks pretty good if you just omit the breadcrumbs.

Shredded zucchini, a little onion, some cheddar, and salt and pepper, baked till golden. Sounds good to me. I'm going to try this and hope they hold together ok without the breadcrumbs. I might add more cheese, too. Still, the carb count will be pretty low.

Sounds good. I would add salt to the shredded zucchini to get more of the water out, and then add a Tbsp or two of coconut flour to the tots to absorb more water and help them hold together better. Zucchini has such a ridiculous amount of water.

Oh, coconut flour is a good idea. I hadn't thought of that. I made them tonight and they tasted really good. I might try the coconut flour next time.
