Perhaps try cream of tarter instead of the baking powder?

I may try one when I get some Jay Robb's chocolate protein powder sweetened with stevia since I can't use Splenda anymore.

OK, well I tried 33 grams of the protein powder and it raised 2.5X and round, but it looked and tasted like a kitchen sponge-- it was totally uneatable-- tossed it out in the driveway for the dog and it bounced like a 1960's superball. I believe the dog enjoyed it though-- I had a real good laugh like I haven't had in ages

I tried your recipe using 1/4 tsp of cream of tarter like used in the "Atkin's Revolution Rolls" and the Hershey's Special Dark cocoa powder. It raised 1.5 - 2 X and looked like something from Starbuck's with a texture of devil's food cake. Next ill try a stevia version or some other AF sweetener combo like glycerin or erythritol and inulin.

Thank you!!! this was just what I needed today!!
Needed a treat today but somethng legal and treats are not true treats unless they are chocolate!!
I omitted the baking powder and only added 2 tablespoons of granular Splenda thus reducing the carb count further.

Thanks again!! you saved my bacon !!

I just tried this recipe, but I used a few Tbs of chocolate whipped cream instead of the heavy cream (I didn't have any in the house.) It came out fluffier (about 3 inches high) and looks and tastes alot like chocolate cake! Thanks for the recipe. I'll be making this again!!!!

Had to share with you all.
Linda has so many amazing recipes on her site, last night I made spinach lasagne, also very tasty.....
I have to admit, not the best cook I tend to burn everything when I do attempt to cook, but last night my husband said You can definatly make this again, lots of compliments......

Hi..

This is MY recipe..and I LOVE it! I like to make it best in a 2 cup
Pyrex glass measuring cup..Comes up like a giant muffin..

I love this for breakie OR for dessert I cut one in half and made some LC mixed berry ice cream in my Bullet...1/2 cup half/half, splenda to taste, 1/3 cup frozen berries and whirl..It makes a yummy soft serve. You could also make some ice cubes of cream and make soft serve in your Bullet too..

Anyone have suggestions on how to make this -without- a microwave? Am I the only person in the world that doesn't own a microwave!?

Oh, Mike -- chocolate is toxic to dogs! It contains a stimulant that is very dangerous and possibly fatal to them. Here's a link with some info, and I'm sure your vet can tell you more.

Lightbulb Thalian chocolate Cake

Well I made several of these and if you use this method it raises 4X and comes out like food or Shoney's hot fudge cake

Ingredient List:

1 egg
1 Tbs unsalted butter
1 Tbs heavy cream or half%half
1 Tbs sugar [use a SF equivalent]
1 Tbs Jay Robb's vanilla (or chocolate) whey protein with stevia
1 Tbs unsweetened dark chocolate cocoa powder
1/1 tsp cream of tarter (optional but improves texture)

Method:

Melt butter in a ramiken, add cream and the dry ingredients. Whisk egg well then whip it in. Microwave mixture lightly covered till cooked dry. Top with melted LC chocolate and or whipped cream.

This is delish-- the protein acts like gluten does in a bread recipe to make it rise. If you want fancy, just separate the egg white, whisk with the cream of tarter then fold in with the rest of the mixed ingredients (I haven't tried this yet).

The dog was really begging, but only got a small taste. I had two myself with a cup of decaf, I hope the caffeine in the cocoa doesn't keep me awake
