Default Chocolate & Peanut Butter Treat

I love LC chocolate and prefer to make my own rather than buy it. I recently decided to try coconut oil as it was mentioned as being good for us and also would help increase metabolism. I made by chocolate by first melting butter so decided to try the recipe with coconut oil at room temperature. I add the peanut butter because I am in a peanut butter/chocolate phase and it add stiffness to the mix. I make this in less than a minute. It can be refrigerated to make it more firm, but I eat mine from the bowl with a spoon.

1 T coconut oil at room temperature (0 carbs)
2 T cocoa powder (Nestle's has 1 effective carb per T) (2 carbs
Sweetener to taste (I use 1 teaspoon Whey Low (1 carb) and liquid sweetener equivalent to about 1-1/2 tablespoons sugar sweetness (0 carbs)
A few drops of vanilla extract
2 T natural peanut butter (4 carbs)
2 T whipping cream (2 carbs)


I add these ingredients to a bowl in the order given, mixing well with each addition.

Approximately 8 net carbs. This is my favorite chocolate treat and so fast and easy. Hope others like it.
