Question re cocoa vs. unsweetened choc.
Hi, Karen~
I'm working on a recipe for fudge and was wondering what taste/texture difference it would make to work with melted unsweetened chocolate instead of cocoa powder. If I'd been intending to use, say, 2-3 tablespoons of cocoa powder (unsweetened), would 1 (1-oz) square of unsweetened chocolate, melted, work as well for intensity of chocolate?
