Default Jelly Donut for breakfast?

My daughter, who is also enjoying a LC lifestyle came to me with a request. She wanted a jelly donut. We put our heads together and came up with a very good substitute...

Carbquick Drop Biscuit Receipe
2 cups carbquick
2/3 cup water
mix well into a dough

We then flatened some dough, put a teaspoon of SF Strawberry jelly in the middle and covered it with another flatened piece of dough. we pinched the edges together forming a solid piece with the jelly in the middle.
We then used our deep fryer and droped the biscuit into the hot oil. After a minute it floated to the surface. We used tongs to turn it and let it cook on the other side for about another 30 seconds. We then drained it, rolled it in Splenda and Cinnamon...HEAVENLY!

Not for everyday but man it was Awesome. Maybe a 1 time per month treat.

You might also be interested in the recipe for Protein Powder Doughnut Holes although yours sounds somewhat easier.

The single biggest (intentional) difference being that the Protein Powder Donut Holes are gluten free. Which can be the harder thing to do.

This looks really good, but is there anyway to bake them instead of fry them? I don't have a deep fryer, and I hate using that much oil in a fry pan. That and since I deep fry things at work all day I get really snarky about being splattered with grease when I get home.
