Thumbs up When you get tired of plain old eggs :)

Om!! OM!!! This was sooo sooo good and soo yummy!!! My husband made a sugar free pumpkin custard, and I was dying, it tasted so good!!! I ate it with some sugar free yogurt I found at Kroger, the store brand, and it has 12g of protein and only 3g of carbs!!!

Here's the recipe:

1 can pumpkin (NOT pumpkin pie filling - it has sugar in it!!)
3 eggs, separated
Equal to taste (he used four packets, I thought that wasn't enough)

beat egg yolks, pumpkin, and Equal together. Set aside.

best egg whites to stiff peaks (may take a while). fold the egg whites into the pumpkin mixture. Bake in a greased, round casserole dish at 350 until the top browns and cracks, about 25-30 mins. Serve with SF yogurt!!! I had some turkey sausage patties on the side to meet my protein requirements, and I added some almonds to the pumpkin/yogurt mixture for some crunch. It was soooo heavenly.

hi - thanks for the recipe, but what is Equal? and what do you mean by "best egg whites to stiff peaks "??

Am from the UK, so the terminology is a bit different here

Equal is aspartame. I wouldn't bake with it. It starts losing sweetness around 300 degrees. Sucralose works a lot better for baking.

I hope you know that a great number of complaints to the FDA concern "aspartame" (Equal's main ingredient) because of the known association with bad effects on your health, particularly suspected brain tumors. A little research on it should turn you to Sweet and Low (saccaharin). The magazine "Flight" many years ago recommended that pilots avoid soft drinks with aspartame since it was known to cause disorientation and headaches. FYI.
