Default Breakfast in a Cup

Breakfast in a Cup

Large muffin tin sprayed with Pam

Microwave or bake 12 pieces of bacon until almost done, but still pliable. Place sausage (patty kind not link) in bottom of each muffin cup, just enough to cover bottom. Place bacon around muffin cup on top of sausage.
Put 1 raw egg in each muffin cup and season with whatever pleases you.
Bake at 400°F for 20-25 minutes (depending on your oven)- keeps well in fridge.

SunnyCarol - I'm assuming you cook the sausage before placing it in the muffin cup but can you please confirm?

And the egg - is it, what I would call, a sunny-side-up texture when it's done baking (cooked egg white, runny egg yolk)?

These sound fantastic and I'm excited to try this recipe!

No, you don't cook the sausage first. There's not that much in there and it gets nice and brown. If you put too much sausage, the egg won't fit. I had the very large muffin cups and the egg was all the way to the top, using a large egg. My egg was all the way done, but very tasty. You are cooking it for 20 to 25 minutes in an oven that is 400 degrees.

These are really good. Rachel Ray made these on one of her 30 minute meal shows last year. I think she called them muffin omlets.

They reheat really well in the microwave. I didn't nuke them very long and did it on reduced power.

Add a little bit of cheese to the tops and I'd call this a PERFECT breakfast on the go.

I'm going to try this, or something similar. But instead of plain egg, I'm going to beat mine with a bit of Thai fish sauce. It gives it a umami (savory) flavor that is kind of missing when you don't use cheese.
