Default Country Club Omelette

This omelette lets you feel like you're eating something really rich ... for breakfast! This recipe makes one omelette.

Country Club Omelette

3 eggs, beaten well

thinly-sliced cooked chicken or slices of deli turkey or chicken
1/8 cup diced tomato (I use 3 "grape" tomatoes)
3 slices bacon, cooked and crumbled (or use REAL bacon bits)
1/2 to 1 ounce cheddar or Monterrey jack, shredded
Hollandaise sauce (recipe follows)

Have filling ingredients prepared before beginning to cook eggs.
Heat non-stick skillet and add a little butter or oil. Pour in eggs and turn heat to low. When edges of omelette are set, lift edge and tilt pan to let uncooked egg run underneath. When no more egg will run, spread toppings along the center of the omelette. Cover and allow to cook for 1 to 2 minutes.

Fold sides of omelette over the center and slide onto a plate.

Top with Hollandaise:

1 egg yolk
dash of white pepper, or black (if you have no white)
1 Tbsp. cream
1/8 c. butter

Whiz yolk, pepper and cream in the blender. In a small saucepan, heat butter on med-low heat until bubbly, but not browned. Start up blender again and drizzle hot butter into the yolk mixture. It will lighten and thicken.

Pour over omelette.

Serve!

I hope you enjoy it! We've been on a "Country Club" kick the past week ... I've made one of these for breakfast and/or lunch every day. My husband prefers to leave off the tomato, but just that little bit is excellent and only a few carbs, especially if you go with 2 or 3 grape tomatoes or one cherry size.

One note, the hollandaise can be reheated (if you don't use all of it), if done on the lowest heat you can muster and stirring constantly. Otherwise, the egg will cook too much and you'll have scrambled yolk.

Great!

It's kind of strange when eating this that I don't feel as if I'm eating an omelet. It's almost as if it's something I shouldn't have. And, you can control the carbs to a great degree, as well as the size of the omelet. Certainly a one-egg omelet is possible.

Happy to help. I'm finding it easier and easier to come up with LC foods, though I haven't tried my hand at baking.

I have to say that I've never been very successful with the Hollandaise sauce from scratch. But I now use McCormack's and it is great! No fuss and no bother and it comes out right everytime.
