Night Before Eggs
Thought I would share a recipe for our family's Christmas morning favorite. I like it because it is made the night before and is popped into the oven in the a.m. Even the non-lc'ers in the family use this recipe when they have overnight guests.
NIGHT BEFORE EGGS
1 dozen eggs, beaten with a little cream, and soft scrambled
1 lb. bacon or sausage meat, cooked, drained, crumbled
1 cup sour cream
grated cheese ( we use sharp cheddar)
Buttered glass pan, 9 x 13 or a little smaller. Layer the barely cooked eggs, crumbled bacon or sausage, spread with sour cream and sprinkle with grated cheese - at least 1 cup. Cover with plastic wrap and refrigerate. In the a.m. - 375 degree oven 15 - 20 min. Turn on the broiler for a moment or two if top isn't brown enough. That's it! We like it with a dollop of icy cold salsa.
