This is a recipe I have created after I recently discovered
Miracle Rice. With a name like "Miracle Rice" you would think you should make rice pudding. But I find the product is more like little round pearls, very much like cooked tapioca. I find the "rice" to be fairly flavorless when rinsed and soaked as directed, but having a bit of a chewy texture like a tapioca pearl. But if you have not tried Miracle Rice you might heed the warning at the above website:

So I first ordered one bag, and then went back and ordered a case! It keeps for about a year in the fridge.
Anyway, I adapted this recipe from the recipe on the side of a package of Bob's Red Mill Tapioca pearls, except that you can subtract out the 55g of carbs for the tapioca in the original receipe, as well as the carbs for the 1/2 cup of sugar!
"Tapioca"pudding
1 package Miracle Rice (0g carbs, or possibly a fraction)
2 cups heavy cream (12g carbs)
1/4 tsp. salt (optional but it does enhance the flavor)
2 eggs, separated (about 0.8g carbs)
sweetener to equal about 1/2 cup sugar (I use liquid Sugar Twin which adds 0 carb. If you use a powdered sweetener adjust the carb count)
1/2 tsp. vanilla. (about 0.2g carb)
Total carb count for entire recipe = 13g. It makes 4-6 servings so that is roughly 2-3g per serving.
Prepare Miracle Rice as directed, drained and rinsed, soaked in hot water and then well-drained again.
Place cream, salt, half the sweetener, and lightly beaten egg yolks in a small saucepan. Cook over low heat, stirring fairly steadily, until mixture comes to a low boil and begins to thicken, so that it starts to coat a spoon, maybe 5 minutes or so. Remove from heat but don't turn off the burner if you have an electric stove. You'll need it again in a minute or two.
Then beat the egg whites with the remaining sweetener, and continue to beat until soft white meringue-y like peaks have formed, Fold about 1/2 to 3/4 cups of the hot mixture into the egg whites, then fold that entire mixture gently back into the hot mixture in the pan and return to heat. Stir over low heat until mixture returns to a low boil, and then continue to stir and cook for another 30 seconds or so.
Remove from the heat and then stir in the Miracle Rice beads and vanilla. Place into serving dishes and chill. However it can also be eaten warm or at room temp. Nice topped with whipped cream. Don't forget the carbs for that also!
