Default WalMart - 40% off Atkins products

I visited the London WalMart at White Oaks yesterday. They're having their 10th anniversary sale (I think it's nationwide) and the Atkins products are 40% off.

For example, the ones I got...

Advantage bars 1.48 (reg. 2.47)
Atkins peanut butter cups 0.98 (reg. 1.63)

I saw it in this week's flyer. I don't eat that sort of thing at this point, but I noticed in the same flyer that they have Jamieson supplements at 40% off as well, and I use some of them.

I picked up several pancake mixes and a few of the Bannana Nut Muffin mixes at $3.37 tonight at the South Keys Location. Still no LC milk.
I've used the pancake mix before as a fase for loaf cakes but it makes them a bit expensive. At $3.37 the pancake mix, mixed as per instructions, works out great with added Pumkin, ground Flaxseed and spices to make LC loafcakes. I add extra eggs and some Davinci as well but it ends up under 10 ECC for a half loaf.

Tracey, I don't use a regular recipe and usually wing it to get a good texture (thick but pours into pans). You might want to lessen the amounts since it made more than I usually make.

Dry Ingredients
1 Atkins Pancake Mix
1 tbs baking powder
1 cup plain Protein powder (Cheap and I split a 60 lb. bag) (0 ECC)
1 Cup fresh ground Golden Flaxseed (Buy 50 lb. bag from Bulk foods and save 20%) (almost 0 ECC)
1 Tbs. Xanthum Gum
3 Tbs. Pumpkin Pie Spice
1 tsp salt

Mix above dry ingredients thouroughly

In Blender mix the Wet Ingredients
3 cups mashed pumpkin (close to 30 ECC for homemade)
8 eggs
1 cup Davinci Syrup (I used gingerbread)
1 cup melted butter
I like things a little sweeter and added 6 TBs Fiberfit (Liquid Splenda)

Pour blended liquids over the dry and mix. If too thin add more protein powder, Wheat Protein Isolate or a bit more Ground Flaxseed.
I sprinkled a little cinnamon over top as well.

This should be poured into 3 loaf pans, buttered or Pam'd, about 2.5 - 3" deep. I had extra and did a pie plate as well.

Bake at 350 for 25-35 minutes until quite firm. If you pull them out early they fall.
