Thumbs up Easy White Pizza

My husband and I love pizza, but we had to cut it out when we started low carbing. I just couldn't say goodbye to our favorite snack, so I exprimented and came up with a delicious low carb friendly version of pizza to statisfy those cravings...I hope you enjoy!

Servings: 2

Ingredients:

One low carb pita split to make two thin round "crusts"(we use Toufayan's brand which seem to be the best tasting)
3 Tbsp Grated Parmesan or Romano Cheese
1/4 C Whole fat or part skim ricotta cheese
1 Tsp Dried Oregano
2 cloves fresh minced garlic or 1 tsp powdered garlic (or to taste)
2 Tbsp Fresh basil (chopped)
Hot pepper flakes to taste(optional)
Olive Oil
1/3-1/2 C Fresh diced red tomato
Lawry's Garlic Salt to taste

Split the Pita so that you end up with two circles. To make this easier, I usually use kitchen scissors and cut around the edge, then split the pocket in two. Place each round in one of your toaster slots, and toast (this will help crisp up the pita "crust"). After the crusts are toasted, lightly coat with a bit of olive oil, and put them in a toaster oven on 350 degrees, until you are ready to spread cheese mixture on them.

In a small microwavable bowl, mix ricotta, parmesan, minced garlic, oregano and a dash of the Lawry's garlic salt to taste. Heat about 30 seconds to 1 minute until the cheese melts and turns gooey. Spread 1/2 of melted cheese mixture onto each pita crust, sprinkle with chopped tomatoes, basil and hot pepper flakes....enjoy!

I don't have the exact carb counts, but I believe each pizza is about 7 net carbs.
