I can buy a gallon of raw milk from a local farm just for the cream at the top, but then what do I do with the left over milk ??? I can waste it feeding the barncats and chickens, but hopefully there is something more useful?

I'd love to make yogurt or cheese, but if I skim off the cream, then it will be lowfat (and therefore yucky ).

Ok, answering my own thread.

1. I could make cottage cheese or a soft cheese from basically skim raw milk. I found that in my cheese making book.

2. I decided to get some baby goats to bottle feed, so that will take all the milk in my universe for the forseeable future, so I'll just skim a bit of the cream and give them the rest of it.

What's on the menu for this coming Autumn? Funny you should ask. Roast goat!
