(Mostly) Cheeseless Frittata
(Mostly) Cheeseless Frittata
6 eggs
1 t. pepper
2 T. butter
1 clove of garlic, minced
3/4 c. of any combination of meat and/or vegetables
1/4 c. green onion or chives
2 T. grated Parmesan (optional)
any kinds of dried herbs you'd like
Beat eggs and pepper; set aside. In a 10" broilerproof skillet saute garlic with butter until browned. Stir in meat and/or vegetables and cook thoroughly. Add green onions.
Pour egg mixture into skillet over vegetables and/or meat. Cook over medium heat. As it starts to set, run a spatula around the edge of the skillet, and lift the edges to allow the uncooked portion flows underneath. Continue cooking and lifting edges until the eggs are almost set.
Place boilerproof skillet under the broiler and broil for 1-2 minutes until done. Sprinkle with cheese (optional). Cut into wedges. Makes 3 servings.
- Or you can bake the whole thing a 350 degree oven for 15 minutes once you add the eggs to the mix.
