Default Creamed Spinach

Creamed Spinach

This can be changed to fit your taste.

1 box frozen chopped spinach, microwave, press all the water out of spinach

In sauce pan over medium heat, melt about 1/2 stick butter, saute about 2 tablespoons finely chopped onion and 1 finely minced garlic in the butter, add about 1 cup sour cream, add 8 ounces grated cheese. Heat till cheese melts, add Tabasco, and fold in well drained spinach. You can eat it as is or put in buttered dish and bake at 300 to 350 degrees till heated thru. If you bake it, you could mix a little parmesan cheese and some ground up pork rinds for a crispy topping.
The kind of cheese you use is strictly up to you. Sharp cheddar is very good or for a real Italian taste add parmesan and/or romano, or a mixture of whatever kind of cheeses you have on hand. The garlic and Tabasco are optional. The cheese will probably make this salty enough without adding additional salt but you should taste it to determine.
Another way to make creamed spinach is to add some olive oil to a skillet, saute some garlic in it, add fresh spinach and saute till wilted down. Add parmesan cheese.

Default Creamed spinach recipe #2

My family devours creamed spinach and learning to make a tasty carb -light white sauce was quite a challenge.

Boil 1 inch of water in a large saucier
Throw in 6 C fresh baby spinach and cover
Cook until spinach is kind of a fluorescent bright green then take off heat.
Keep cover on for another 2-3 minutes then drain completely in a colander
Chop up ( I just smoosh with the spoon)

Cream sauce

heat in skillet 2TBS butter
throw in fresh minced garlic and a dash of paprika
throw in 1/2 C grated parmesan
add heavy cream until you get the consistency you want.
Take off heat and toss with spinach.

My baby even eats it.

THIS RECIPE IS GREAT, I TRIED IT FOR THE FIRST TIME LAST NIGHT. THE WHOLE FAMILY LOVED IT.

1 PCKG FRESH SPINACH (10oz) *rinsed and chopped
3oz cream cheese
1 cup shredded cheddar
1/2 stick butter
1 teaspoon heavy cream

Melt butter in pan, add cream cheese and stir until very soft. Add spinach and stir together until wilted and coated. Add heavy cream and cheddar cheese, stir until melted. You can serve like this or bake at 325 for about 20 min. I baked mine and it was delicious!

Cargait that recipe sounds great I'm going to try it tomorrow. I just bought a huge bag of spinach so I need recipes to use it all up.
