Default Pumpkin "pancake"

I was craving something this morning so came up with this on the fly. Was pretty tasty.

1/2 cup canned pure pumpkin (not pumpkin pie filling)
1 Tbsp of coconut flour
1 egg
1/2 tsp of vanilla extract
1/2 tsp each of cinnamon, nutmeg
1/4 tsp of ground ginger

Mix everything together in a small bowl and let it sit for about five minutes.

Heat a skillet over medium heat, grease ( I used 1/2 tsp of coconut oil, could use butter here). When hot, drop pancakes into it and cook. Let cook 3-4 minutes per side, they will seem like they aren't cooking as they will remain a little loose and may break a bit when turning (not like regular stiff pancakes, they also won't bubble on top like regular pancakes). They should be brown when you turn them.

I got two decent sized 'cakes' out of this recipe, only ate one, topped with some raw walnuts and a drizzle of sugar free maple syrup. Reminded me of a cross between pumpkin pie and a morning glory muffin with the walnuts added.
