A friend of mine told me she was at a bbq, and asked the caterer for a vegan alternative. The caterer bbq'd a portobella mushroom minus the stem for her.

That's what I would use. I grill them after basting them with olive oil. Yummmmmm

I agree, grilled portobello mushroom caps are the easiest solution to the vegetarian burger...but if you prefer something with a more chopped-meat consistency, you might try chopping the mushrooms very finely, using an egg to bind them, and mixing them with finely chopped nuts (almonds, walnuts or pistachios all work well.)
