Or it might not be any additives, just the red wine. An allergy to tannins in red wine is pretty common. A couple of my sisters have this problem and drinking even a glass of red wine will give them a headache. White wine doesn't cause the same problems, so it's an easy thing to test.
Also, your gluten problem might really be the mold. A friend of mine developed a severe mold allergy after he developed a severe case of mycotoxicosis from a long term mold exposure. He's recovered from that, but now reacts severely to anything with a little mold. There are mild amounts of mold in most grain silos, so most grains come with a little mold.
