Default sweet/salty/crunchy

Heat a small frying pan on high heat throw a handful of pumpkin seeds (plain, unsalted) wait a minute drop 1/2 teaspoon of butter in the pan mix it up, when its start to pop then throw some salt, cinnamon, and two packets of splenda stir it up and let it cool.
Perfect for PMS days especially (sorry guys )

Now that sounds like somthing I would enjoy. Thank you soo much for the idea.. Any other ideas for seeds or nuts? I'd love to hear em.

This is LindaSue's recipe from her site. It's awesome!! She is a genius!

COCONUTTY CRUNCH
2 ounces walnuts
2 ounces pecans
2 ounces almonds
2 ounces macadamia nuts
2 ounces unsweetened coconut (1/2 cup)
2 tablespoons flax meal
2 tablespoons butter, melted
1/3 cup Splenda or 1/2 teaspoon liquid Splenda
1/2 teaspoon vanilla
1 1/2 teaspoons cinnamon (optional - doesn't increase the carb count)

Coarsely chop the nuts; put in a medium bowl. Stir in coconut and flax meal. In small bowl, mix butter, sweetener, vanilla and coconut extracts. Pour over nuts and toss to mix well. Spread on jelly roll pan and bake at 300º about 10-15 minutes, stirring every few minutes, until lightly toasted. Watch closely so it doesn't burn. Cool, then mix in the cinnamon. Store in airtight container in fridge.

Makes about 2 cups

With granulated Splenda: (1/3 cup - 4.5 net carbs) (2 tablespoons - 2 net carbs) (1 tablespoon - 1 net carb)
With liquid Splenda: (1/3 cup - 3.5 net carbs) (2 tablespoons - 1.5 net carbs) (1 tablespoon - .5 net carb)

I like a little of this mixed into my yogurt. It makes the yogurt a little more filling and satisfying.

UPDATE: I've decided that I like this better with some cinnamon added.

THis recipe originally called for coconut extract(optional), but I never used it.
I also add sunflower kernals too! Use whatever nuts you have or like!

I'm baking something similar in the oven right now...

-plain, unsalted, unshelled pumpkin seeds (rinsed)
-melted butter
-cinammon
-kelp salt
-granulated splenda (honey works too... just melt it in the melted butter before throwing it into the bowl to mix with the other ingredients)
-cayenne pepper (I like a little kick )

Mix everything together. Throw it onto a pan lined with parchment paper... and bake!

These are so good!

I've done something similar with unsweetened coconut flakes. Yum!
