Default Flax Bowl Muffins

Yum!

Okay, this morning was only my second time to try making a flax bowl muffin. The first time, I microwaved it too long (2.5 minutes), didn't use enough liquid OR enough sweetener (just a spoonful or two), and it turned out all hard and dry and kinda tasteless. I thought, "Phew! This must be an acquired taste!"

This morning, though, I gave it another go. I used more Splenda, some Torani s/f syrup, lots of cinnamon, and I only nuked it for two minutes.

Perfect! It was sweet and tasty and reminded me a LOT of the taste and texture of french toast. So thanks for the recommendation! I see more of these in my future! (And don't worry, Judy--I remember what you said about flax replacing my nut allowance for the day. )

Next up--the flax wrap. Anybody made these? Do they hold together pretty well?

I haven't done a wrap yet but here are my ingredients for my 2.5 minutes flax bowl muffin:

1 egg
2 ozs egg whites
1 scoop whey protein powder
1/4 tsp baking powder
2 tbs flax meal

mix well ( I use an immersion blender with a whisk attachment.)and pour into oversize mug sprayed with pam, nuke 2.5 minutes.

I slice mine into thirds and have it with some blackberry jam.

Mmmm, thanks Judy! Putting the protein powder in it is a good idea--probably gives it a little extra oomph for getting you through the morning.

These are OK for Phase 2 of SB????? Correct?????
.....I sure hope so because my DH loves this recipe and he doing this with me.....

Yes for phase II and it can be used for phase I also. Enjoy!! I love them!!

They sound like something I could eat before the gym in the mornings. Thing is I don't know if we get flaxmeal here. I've seen flax seeds and even flaxseed oil, but no flax meal.

Actually, I take that back. There's a shop around the corner from me that sells ground flaxseed and flax powder. The difference is that one is rather coarse. Which one is the one you use in the muffins?

Probably the ground flaxseed. The flax meal I use is pretty coarse.

Ta. I'll try the coarse one first.
Both list the ingredients as 100% flaxseed and nothing else, so I'm sure they're both kosher. It's just that one's been pulverised and the other is simply ground.

I was just about to make this recipe but I'm finding it hard to follow, as simple as it may seem.

Firstly, 2oz of egg whites?! My egg whites come in eggs, not ounces. So I've had a hard time figuring out how many eggs I need to crack.

How big is the scoop for the whey protein? How does it compare to a tsp or tbsp?

How big is an oversized mug? . . . in ounces or whatever.

What power microwave? 650W? 750W? 850W?

I'm going to have to guess at a lot of things here so this could turn out to be a disaster

Oy!! poor you!

I can buy egg whites in a container....I can only guess that I egg will give you 2 ozs of whites.
1 scoop of my protein powder is .7 oz.
The mug needs to be 4-5 inches high on the sides as this baby rises...then falls!!
Microwave on high...whatever that is for your microwave.

If it does not work out well, play around with it until you do get it right.

I did it anyway without waiting for a response.
I put 2 egg whites in, got the largest mug we have in our kitchen and bunged in what i thought was a reasonable amount of protein powder.
I think it came out ok. But then I have nothing to compare it to.

It was a bit dense (as far as texture goes) and stodgy, had a hint of vanilla. I bunged some butter on it to make it less dry to eat.

Boy did that thing rise. when I put it in the cup it was only 1/3 of the way up so I thought the cup was too big. I stuck it in the microwave and looked back after 2 minutes it had risen to about twice the height of the cup. It did go back down a bit.

I might use the whole egg next time as I hate having to throw away the yolks.

Anyway, thanks for the recipe. Tomorrow I'm making flax pancakes.

2 eggs will bring the calories up too high....but if thats works for you...Good!!

I use a nice bit of blackberry jam on mine.....

I'm not yet up to the stage where I'm eating jam. But I could see how it would make a whole lot of difference.
I've got some sf blackcurrant jam on standby for that occasion.
A also went out and bought a wider mug just for making these muffins in.

It's official. I am addicted to flaxmeal. Made some pancakes this morning. Yum yum yum.
The possibilities are endless.
I might try make some more traditional oven muffins next.
