Chicken Fricassee
Adapted from The Schwarzbein Principle Cookbook
1 Servings
1 tablespoon olive oil
1 tablespoon unsalted butter
1/2 cup chopped onions
2 tablespoons minced garlic
1 skinless boneless chicken breast half
1/2 cup diced red bell peppers
1 cup sliced mushrooms
3/4 cup frozen artichoke hearts, thawed, drained and chopped
freshly ground black pepper
1/4 teaspoon cayenne
1/4 cup heavy cream
2 teaspoons Dijon mustard
parsley, chopped
Saute the onions and garlic in the oil and butter. When the onions are translucent, add the chicken and cook until it is no longer pink. Add the remaining vegetables, pepper, cayenne and mix well.
Add the cream and mustard, cover and simmer over low heat for about 15 minutes. Add the peas and parsley and serve.
