Default Poppyseed Dressing -- LC

I had a wonderful salad mix (Sweet Kale) from Costco with a poppyseed dressing and I wanted to make the dressing LC.

I took this recipe from Epicurious and instead of using onion juice, I added about 1/3 cup of sweet onion and just pureed it in my Ninja blender. I used a mix of "Just Like Sugar" and liquid sucralose and did it to taste. Use whatever sweetener you want, but be cautious with Stevia. It might work, might not. I also added slightly less than 1/4 tsp of xanthan gum to make it thicker.

It tastes great!

Instead of using the sweetened dried cranberries and pumpkin seeds in the salad kit, I used roasted sunflower seed.

What a tasty and healthy salad!
