I make my eggs Asian style sometimes!!!
figured I would share a secret taught by my dear asian friends
heat the pan as hot as it can get (safely)
slice lenghtwise good hunk of ginger RUB in generously
all over the pan.......
add your butter, oil, spray ( you can cut that piece of ginger off the rest and let it float/ccok w/ eggs if you really like ginger)
* if your a garlic lover do the same!!!s above both rubbing pan and leaving in...
add eggs (i break the yolk) add 2 or 3 or ? drops of good soy sauce, flip
garnish with a few long slivered (juilanne, THIN) strips of white/mostly green from gr. onions/scallions!!!
Very tasty and the ginger rubbing is something you can do with any of your cooking where ginger is an ingredient
I sometimes make my eggs thai style by mixing in a bit of water and some fish sauce. It spreads out, crepe-style, and the water makes some bubbles in the crepes. You can fill with veggies, hummus, or whatever you like.
