Default Low Carb Dessert Ecstasy

Hello my fellow low-carbers! The following thread will feature desserts that I've "cooked-up" in the kitchen... I like easy desserts that are satisfying and of course won't ruin the low-carb diet! I'll be trying to post as many I can per month, around 1-2 per week. Feel free to post your own, or comment on how you liked the recipe or how you modified it.

Here it the first recipe:

Strawberry Cream Dream

Ingredients:
  • 1 package of Strawberry Jello Light (Sugar-free,10.1 grams)
  • 2 cups boiling water
  • 1 cup whipping cream
  • 3/4 cup sliced strawberries
  • 1 tsp vanilla extract
  • 1 tsp sucralose


Instructions:
1) In a medium sized bowl, mix Jello package contents with 2 cups of boiling water. Stir until all is dissolved, then place in the refrigerator for 1 hour.
2) Whip cream in a small bowl at high speed until beaters form stiff peaks when lifted. (About 4 minutes) TIP: Refrigerate bowl and beaters for 1 hour before beating for best results.
3) Mix vanilla and sucralose into whipping cream at low speed, until fully combined. If the Jello is still cooling, place in refrigerator.
4) Take cooled Jello from fridge (it will still be watery). With beaters, mix whipped cream mixture into jello bowl at low speed until fully combined. Then, beat dessert at medium speed for 30 seconds.
5) Press strawberries into dessert evenly, then place in refrigerator for 2 hours.
6) ENJOY!!!!


Makes approx. 6 servings

Modifications:
1) Instead of placing dessert back in the fridge for 2 hours, pour mixture into individual ramekins, then place in fridge. OR
2) Place dessert in paper-lined muffin tins, and place in freezer for a frozen delight.
