Cool High fat jello treat

I know the jello is not a new recipe, but I thought it might help someone who doesn't have time to experiment with variations. You could use low fat, but be aware that that will change the carb.

Jello, lime with cream cheese & pecans, Servings: 4

Jello, lime with cream cheese & pecans
1 cup hot water
1 envelope gelatin
4 packets Stevia
1 envelope unsweetened lime koolaid
1 eight ounce pack cream cheese
½ C chopped pecans

I divide the pecans among four ramekins, about 2 T each of pecans.
Disolve gelatin in hot water, add Stevia and koolaid. Cut in cream cheese. I mash it against the sides until it's relatively small. You now have 2 cups, put ½ cup into each ramekin. Refrigerate..

I made what turned out to be a 3 layered jello/cream cheese dish tonight. I took a box of SF lemon jello and added the cup of boiling water, then warmed up the cream cheese & mixed well (& added a small dab of sour cream.) Then instead of adding the cold water, I added another cup of hot water and after it set, it was in 3 layers...jello on bottom, a nice creamy mix in center and cream cheese on top. It was "fun". LOL

Thanks for posting this recipe using stevia. I've trying to look for some new ways to use it!
