Default THE BEST ever pancakes! You must try....

Ok...these are waaay better than any low carb mixes I have tried, and any of the different recipes...They don't fall apart, they are not too grainy, they are not too dry, they are not "eggy"...They are fluffy, and best of all, they are made with no soy...which gives them an authentic pancake flavor.

Here goes:
1/4 c flax meal
1/4 c whey protein powder (this equals 1 scoop of mine, which is also unsweetened vanilla flavor.)
1/2 c part skim ricotta
2T buttermilk (this gives best flavor, and is only 12 carbs/cup)
2 eggs
1t liquid stevia
1T splenda
2t baking powder
1T cocoa powder (I recommend you use only this, b/c it gives the real chocolately taste that can't be duplicated)
1-2T water to thin

In separate bowls, mix all dry ingredients, and all wet ingredients (except water). When finished, add the wet ingr. to dry. Mix well. Thin with water...I used 1T. Cook em like pancakes...I cooked mine in virgin coconut oil purchased here (because it is the best I have tried):

It made 7 very good sized pancakes, of which I could only eat 3. I ate mine with whipped cream...to die for...

Carb breakdown:
flax meal: 3g
whey pro: 2 g
ricotta: 2 g
buttermilk: 2g
splenda: 2g
cocoa powder: 2g
------total: 13g (prolly less, but I am always "safe")
For 7 pancakes...that is <2g/pancake, but I round up to 2.
