Default Green Goddess dressing

I found a recipe the other day and modified it slightly - it turned out great! This is what I used:

1 cup mayonaise
1/5 cup sour cream
1 ripe avocado
2 or 3 green onions - diced
1 or 2 cloves garlic
2 teaspoons anchovy paste
1 tablespoon lemon juice
1/4 tsp salt
dash of ground pepper

combine all ingredients in blender and puree until smooth.


This is so decadent! I used it with a salad of crab meat, hard boiled eggs & yellow bell peppers on lettuce the other day. Fabulous! The texture is thick and very smooth.

Oooops - I knew I should proof it 1st! - that is 1/2 cup sour cream!

OK - so now that I am home and looking at the recipe instead of reciting from memory... I missed 2 ingredients:

1 teaspoon vinegar - the recipe calls for tarragon vinegar. I used my own garlic rosemary vinegar instead.

1 teaspoon splenda

I'll get this right eventually.

I did a recipe analysis on this. 2 Tablespoons have ~ 1600 calories - all from fat. Carbs: 6gm. Oh well, no wonder it tastes so good!
