Default Krys' Low Carb Brownies

I made this recipe when Roxanne asked me if I had a brownie recipe. Taken from my blog: http://lowcarbmadeeasy.com/2010/08/...olate-brownies/



Ingredients:

1 stick of butter, melted
1/3 cup unsweetened cocoa powder
1 cup sweetener (I used Ideal – this is granular)
2 large eggs
2 teaspoons vanilla extract
1/4 teaspoon baking powder
1/4 teaspoon salt
1/4 cup almond flour
1/4 cup unflavored whey protein powder (I used Optimum Nutrition Any Whey)
Preparation:

Grease and 8×8″ baking pan or glass baking dish and set aside.

In a large bowl, cut your butter into slices and microwave for 1 minute 15 seconds, or until butter is completely melted. Once melted, add in the eggs, sweetener, and vanilla. Stir, stir, stir until smooth.



Once all nice and combined, add in everything else! How easy! Stir until it looks like good ol fashioned brownie batter!





Bake at 350 for about 17 minutes. If using a glass baking dish, bake at 325 for the same amount of time. Check at about 15 minutes for done-ness. You might pull them out then if you like them more fudgey.

DONE! How flippin easy was that? This was the fastest and easiest recipe ever. Enjoy! Keep them in the fridge - they get even better.

Nutritional Information (12 brownies)

Carbs: 3.6g total, or 2.6 net
Protein: 3.2g
Fat: 10g
Fiber: 1g
Calories: 105

I haven't made them without whey. All almond flour will not bake the same and the texture will be pretty grainy. Whey works wonders in helping the texture of lc baked goods, so I'd strongly recommend getting some if you want to try baking.

Is whey protein powder the same thing as whey isolate?

No, they aren't the same, but they will work the same. Whey isolate is more "concentrated" protein and usually more expensive than typical whey protein powder. Outside of their properties, they should function the same in this recipe.

Sure. It may not taste exactly the same, but it would be fine. I might use slightly less vanilla extract if you end up using it just so the vanilla doesn't overpower the chocolate.

These are very good. We did cut the xylitol down to just over 1/2 c. Still very sweet. The xylitol tends to settle down at the bottom, but no complaints here. It's definetely a great brownie. Thanks Krystalr!

Awesome! Used 24 drops of ez sweet and ommitted the vanilla cause I didnt have any, they still came out awesome. I had some melted sugar free semi sweet chips that I spread on top as an icing, hubby ( non lowcarb) said they were fabulous!

I made these today (following the recipe exactly) and they are incredibly good! Even the raw batter in licking the bowl is ridiculously good. I'm going to have freeze most of the brownies to keep from eating them immediately.

I made the brownies with Ideal, which I'd never used before. When I looked for the nutritional information to put into Fitday, this is what I found on the official Ideal website:

There are 53 grams of carbohydrates and 202 calories in a cup of Ideal® white granulated sweetener.

That's more than I was expecting! The "No Calorie" listing on the label applies to 1 tsp. By US law, a food can be labelled as "0 calories" if it contains less than 5 calories per serving; that's why they keep the serving size so low.

(Note that granular Splenda has 24 g carbs and 96 calories in a cup.)

Using the values from the Ideal website and counting each batch as 12 servings, FitDay gives me 131 calories with 7 g total carbs, 1 g fiber, and 6 g net carbs per brownie.
