Default Poached Egg breakfast

Hi,

This recipe comes courtesy of Neil Perry Frech and Fast (slightly modified)

2 eggs
Bacon
hand full of salad greens
Balsamic Vinegar
Salt and Pepper
White vinegar
oil

1. Poach eggs - the best way I have found is to put a pot of water on to boil at a med heat. add salt. When small bubble form at the bottom of the water ad splash of white vinegar, crack egg into cup and slowly pour into water. The trick is to put the egg in just before the water boils so it will hold it's shape. Use a spoon to shape the egg white if needed. Cook to desired doneness. (pref runny)
2. While eggs are poaching cut bacon into small pieces - cook with oil in fry pan
3. Arrange salad greens in bowl or on plate (which ever you prefer)
4. Top with bacon and poached eggs
5. ad balsamic vinegar, salt and pepper to taste

I also think that shaved parmasan cheese would be nice, and DH has also added ceaser salad dressing.
The original recipe calls for frisee (what ever that is - looks kinda like lettuce) and red wine vinegar. Could also mix the vinegar with olive oil for dressing.

Obviously you need to choose the type and amount of bacon according to your LC plan.
