Cheese-stuffed veggie - alternative to eggs
Hi all,
I just made this this weekend, as an alternative to an egg breakfast (as I am one of those who finds it hard to stomach eggs first thing in the morning). The only thing is that it isn't super filling, but you can add some other kind of protien to it like bacon or breakfast sausage or even a yogurt to complete it.
Sour cream (I used 2 tsps)
Flavored spreadable cream cheese (I used the new Phillie whipped garlic and onion cream cheese) (I used 2 tsps)
1/2 a bell pepper or 3-4 celery sticks
salsa (I used about 3 tsps)
Wash the pepper/celery and clean free of nasty spots, seeds, etc. In a separate bowl, mix sour cream and cream cheese until smooth. Fill veggie with cheese. Top with salsa.
Probably people do a version of this anyway, but it's a great way to get a serving of veggies in!
