Default WOWEE!! Spinach "Bread"

I was not too sure about trying this at first, but now i cannot believe that i waited so long! it's quick, easy, and delicious! i've been eating tuna salad on my spinach bread, but i've got something else in mind that i want to try--slices of tomato brushed with olive oil and sprinkled with basil, broiled for just a few minutes, then topped with swiss cheese and let melt, eat between 2 slices. i would have tried this already but i was all out of tomaotes and the weather has been too bad to get out. here goes----

Spinach "Bread"

small package of spinach (around 10 oz) thawed and drained
4 eggs
garlic
onion powder
salt
pepper
cayenne

mix all ingredients together well. bake in a greased 8x8 glass dish at 400 for about 15-18 minutes or til firm. let cool. slice into 4-6 pieces
and eat with your favorite sandwich stuffers!

this can be stored in the fridge or freezer. i like it best warmed slightly.

Sounds great....I'm always looking for a new way to have eggs. I think I'll try making spinach "muffins", too....maybe with cooked bacon on the bottom...or? The varieties are endless.

judy, thought i might let you know that i made this last night and added in about a 1/2 cup of mozzarella cheese. the result was heavenly! my fam had their grilled burgers on regular buns and i had mine on my spinach "bread"!

Adding cheese, sounds like a good idea. I made this today and I have to say--the first couple of bites were a little off-putting. Once I reminded my brain that it was spinach bread, though, it was actually very good. I gave the dog a little to try (he was mooching), fully expecting him to hate it. I think he's ADDICTED now! He couldn't get enough! Poor little guy.

Will definitely use cheese next time.

Thanks for the cheese tip, Leshai. I did go shopping last night. Actually remember standing by the fresh spinach, thinking it didn't look very good and decided not to buy...completely forgetting that I was supposed to pick up a package of frozen spinach for this recipe. Duh!

Hi,
This is a great recipe. I made it on top of the stove in a 8 inch frying pan. I really whipped the eggs to make the bread stiffer. I added more italian seasonings. Mine came out like a small personal pan pizza.

Smile Spinach bread ... slices like bread?

This sounds like a frittata or crustless quiche style dish ... does the "bread" really have a stiff texture? I can't wait to try it ... I love spinach!
