Default Creamy Chicken?

I've been looking on the boards, and can't seem to find a relatively simple recipe for chicken breasts in some sort of creamy sauce. Anyone have anything good? Thanks...

My recipes are all very simple I cover chicken breasts with prepared Alfredo sauce (about 3 carbs per serving) and bake them at 350 for about 30 minutes, or until they're done. If I have more time, I put in more cheese, or saute mushrooms and pour them over the top, too. It's not exquisite, but it's edible

I use Campbell's ready to serve cream of mushroom soup as a "sauce". It has 8g carbs per cup, I don't use a whole lot per serving. Sometimes I fry some mushrooms and onions then mix in the soup. It's pretty thick.

I made this today. It's really good - I usually make a pot of it about twice a month because everyone loves it so much and it's easy.

Dice and saute half a large onion in a big pot or Dutch oven. Use some butter and olive oil. Cube from four to eight chicken breasts and add to the onion. Stir in salt (a teaspoon?) and lots of freshly ground pepper. Meanwhile, cook one 16-oz package of frozen broccoli or the equivalent in fresh, then drain and set aside. When the chicken looks cooked, stir in one 8-oz block of cream cheese. When that has melted, stir in 1/2 cup whipping cream (optional) and one can of condensed cream of mushroom soup. You can add one soup can of water for a gravy-like sauce, or up to three cans if you want to call it soup. Mix in the cooked broccoli, heat and serve.
As you can see, this is a pretty flexible recipe so I can't give you an exact carb count, but a normal serving is a complete meal and will be less than 8 carbs if you subtract the fibre.

Default Cilantro Cream Chicken...yum!

I found this recipie on another low-carb board and made it for my husband and I. He rated it the best of all the items we have tried so far.



Terry's Cilantro
Cream Chicken


Ingredients:

4 boneless chicken breasts
3-oz. pkg. cream cheese
3/4 cup heavy whipping cream
Juice of 1 lime (or 1 Tbsp.)
McCormick's Rotisserie seasoning to taste (or other no-sugar brand)
Salt & pepper to taste
3 Tablespoons Butter
1/2 cup chopped (fresh) cilantro
Brown chicken in butter, seasoning chicken while browning. Remove chicken from skillet when browned. Add cream cheese cubes and heavy cream. Add lime juice and chopped cilantro. Return chicken to skillet. Cover and cook on low for 15 minutes.

Serves 4. 1.9 carbs per serving.
