While I was eating it, which by the way was DELISH!!!! , I was thinking I could have added in some of my almond meal...def next time!!
These were WONDERFUL !!! I sliced up some fresh blackberries and added to the mixture. Wasn't sure by the looks of it if it was gonna turn out ok or not but it sure was tasty!! I think next time I'll add some whipped cream on top!

So many neat improvisons to the original recipe!

BTW, I keep a can of Ptptpttptptptptt cream (generic redi whip in the spray can) for use on lot's of things. I use so little that it never gets a chance to go bad, nor do I have to whip up a batch every time I want a bit for one pancake.

Ok ok..I FINALLY made these pancakes this weekend. Ohmygoodness they were SOOO yummy!! My DH LOVED them too! He had a bite of mine Sat morning and then was begging me to make him one! He is eating pretty LC now too so I was excited to find a new breakfast option that we both really loved & were excited about.

LC pancakes with SF pancake syrup and some sausage & coffee..YUM! The break from our usual eggs was so nice.

I think I'm going to try this next. Since my DH loved the pancakes so much I would love if I could make him something similiar but more like a muffin that he could easily grab and take into work with him..

Does anyone know if the pancakes themselves are any good reheated in a microwave..or would they get too dry?

I doubled the recipe and it made a good size pancake. I didn't think with the original recipe that it would be large enough. Pretty tasty tho

You can get 2 nice sized, but smaller pancakes out of the recipe. I generally use the recipe as for one person. If there are 3 people I triple the recipe...the trick is to let it stand enough for the baking powder to do it's thing.

And come to think of it I have not had these in a while...guess whats on the breakfast menu for tomorrow morning?

I made this today for my breakfast using the original recipe and a whole packet of splenda instead of 1/2. Topped with sugarfree syrup, side of bacon. I was pleasantly surprised since I am not a big fan of flax! I did a variation 2 weeks ago using the protien powder and I think I like this one best.

1 TBS Flax meal
1 TBS Almond meal
2 egg
1 tsp baking powder
1 tsp cinnamon

These bubbled at the surface like 'real' pancakes, and were to die for! My new fave, thanks so much.

PS - topped with a couple of strawberries and melted square of Cote d'Or 86% chocolate.... mmmmmmm

I think I'll try this version next time since I have some almond meal.
