Default A completely different Breakfast (or have for lunch/dinner)

I'm not very good at writing up recipies caus I just throw things together and see how they turn out - but today I made a really different yummy breakfast (you could have it for any meal though) and thought I really had to share!

(Btw I believe all below ingredients are optional - you can mix and match to your hearts content - thats how I always cook )

3 rashers bacon (sliced, diced and added, or cooked whole and put under rest of ingreds)
3 small courgettes (zucchini)
2 portbello mushrooms
2 cloves garlic
1 small - med tomato
1 tablespoon butter
1/2 avocado
1 tablespoon sunflower seeds
1-2 slices of cheese cubed

cook bacon and set aside, brown courgette, garlic and mushrooms in butter. add tomato and seeds (and bacon if adding to it) cook for a little bit longer (but stop before tomato goes soggy) Add avocado and cheese and cook for a tiny bit longer until cheese goes soft and starts clinging to rest of ingredients (but stop before cheese completely melts). Pile mixture on top of bacon and go to it!! yum (you could also add some sour cream on top I think it would go well)

Carbs per serve with fibre removed - 5.5

This made enough for two and was really filling - a great way to get some veges into the menu, and a great way to up your fat!
