Default Cheesecake Stuffed Strawberries

So I saw a picture of stuffed strawberries on allrecipes.com last week. They were stuffed with some super high sugar cream cheese concoction but looked so yummy so I made my own LC version.


Here is what I did:

1. I cut the top off the strawberries. I cut in from the top, like a pumpkin, and pulled the top off. Usually a chunk of the strawberry comes out with it, leaving a hollowed centre.

2. I filled the strawberries with Cheesecake Pudding (Note: I used a very thick 18% MF Sour Cream. It made the mixture thick enough use a frosting bag and tip so that I could make it pretty.)

3. Decorate! We melted some LC chocolate in the microwave and mixed in a bit of coconut oil with it. I then let the kids help drizzle it on top of the strawberries. We sprinkled some of the cheesecake mixture with shaved chocolate. I also put the leaves back on top of some of them.

4. I then stuck them in the fridge for a few hours to let the cheesecake mixture and the chocolate to set.

And that's it. Next time I think I'll try some different cheesecake flavorings, like chocolate.

OMG doesn't even begin to describe it!!! How fabulous!!! I adore the cheesecake pudding recipe. I sometimes add a small dollup of SF strawberry jam to liven it up but its wonderful alone as well!

I CAN NOT wait to make this! It will look so pretty on a serving platter!!!

These would be perfect for a wedding or any other event - fancy or simple.

If you search Google Images for "Stuffed Strawberries" you can get a ton of amazing pictures. The recipes aren't LC but it will give you some great ideas of how to dress up your berries.

The cheesecake mix made with the 18% sour cream is also thick enough to decorate LC cupcakes, cake or even just to decorate a cheesecake to make it look fancy.

I attached a picture of some of the cheesecake pudding I put in a container so that I could play with the decorating to see how it would work. I mixed some cocoa powder in some and layered it. (I love cake decorating and could never find a good SF "frosting" to work with but this worked fabulous. I think I could have even make roses if I tried.)

I was looking for a LC frosting for my daughter's Wedding cheesecake and the cheesecake pudding will be perfect, not to mention the strawberries for decoration.
