Lightbulb cinnamon and ricotta pudding

The other day I was asked if I ever had cinnamon and ricotta cheese pudding. The thought made me want to get sick until my friend made me a cup of it. It is simply great, super quick to make and yummy. There is nothing to it. I have never heard of doing this before and don't know if anyone else has either but I LOVE IT!
Just a few tablespoons of ricotta cheese, mix in one packet of splenda or other sweetener and a splash of cinnamon mix and enjoy.
It sounds nasty but its sooo good. give it a try for a quick sweet fix.
My friend said she found this recipe while doing the south beach diet. for a chocolatey twist I added a little bit of hersheys unsweetened cocoa powder.

I often do that with plain, full-fat yogurt and/or cream cheese. Sort of an instant cheesecake pudding!

Never tried the ricotta.. but I've done this with Cream Cheese and it's the greatest thing to cure a sweet tooth craving.
I tried with a dab of peanut butter too.. which I think also tastes wonderful (unfortunately any kind of pnut butter in even the tiniest amount, stalls me -blah!)

I did it and loved it.... also reminds me of what they stuff Cannoli with!!

ricotta cremes are even better mixed in the blender
I use various extracts to make all kinds of flavors: almond, cocoa powder and peppermint extract, raspberry, lemon, etc...
