Hi Julie. I also wish you well in finding what will work for you. Do you know what foods irritate your stomach and esophagus? I have to eat gluten-free and for me, reflux is one of the first clues that I 'glutened' myself. Another is overnight water weight gain, like you described. There are probably a lot of other irritating foods, too, mostly in the plant family. An elimination diet might be a good idea. If I suspected further food intolerance, I'd probably either go carnivore or stick as closely as I could to Dr Westman's M.E.A.L. concept: meats, eggs, added fats, and leaves (lettuce only if I was testing food intolerance, then try others.)
Could you share some sample menus that you've been having? Someone might be able to spot something.
Best of luck.
