Default Stuffed Tomato

I made this for dinner, but i think most people would think of this as a brunch dish.

Ingredients:
3 tomatoes
3 eggs
pesto ( i buy the stuff in a jar, but you could make your own)
shredded mozzarella

1. Preheat oven to 375
2. Spray baking pan with Pam
3. Scoop pulp from tomato
4. lightly salt inside of tomato
5. put 2 tbsp of pesto in each tomato
6. crack an egg into each tomato
7. put in oven and bake- i like the egg yolk soft, but cook until it is a few minutes away from being however you like it
8. add cheese about 1-2oz per tomato)
9. cook until bubbly

takes about 30 minutes

nutrition depends upon the pesto you use/amount of cheese/etc....
but mine came out to:

380 calories
6 net carbs
17g protein

This sounds really yummy, I am going to try it this weekend. Is a serving size one tomato?

One was enough for me, 2 for my husband.

For the nutritionals, 1 tomato= 1 serving.

Hope you like it as much as we did
