Read this in Meme's J - made some for myself! Yellow squash sauteed with onion and garlic, sprinkled with onion and garlic powder,S&P - it was good!

Made zoodles w/garlic infused olive oil, peas, shrimp and Parm on top - this was supposed to be my Valentine's day dinner and I didn't have time to make it.

It was really good! I might try egg crepe noodles though, maybe a heartier pasta substitute.

today: Meatza w/sauteed peppers and mushrooms. Usually don't eat lunch, just a late breakfast... but this week I am.

You do? I'm glad. It's funny how some of my receipts pan out in the moment. I think I only had cheddar cheese that day and that's how it became Mac&cheese. I do always love to add things to my veggies and also do the same veggies in different ways.

Ha, yes! That was so good I am going to make it again, and easy to make. I have another head of cauli to use up.

Breakfast for lunch (took a nap this am, due to waking up in the wee hours with a wicked ear ache):
2 eggs over easy with sautéed mushroom and scallion, slice of cheese melted atop, and two slices of our home cured, sugar free bacon.
