Smile crustless quiche

Now that I finally figured out how to post a new thread, (senior moments happen quite often to me), any how I wanted to share a receipe I found that I think is great.

Vegetable Quiche Cups To Go

Serves 6

1 pkg. (10oz) frozen spinach
2/4 c liquid egg substitute
3/4 c shredded low fat ccheese
1/4 c diced red bell pepper
1/4 c diced onion
3 drops hot-pepper sauce (optional)

Microwave the spinach for 2 1/2 minutes on high, drain excess liquid.
Line a 12 cup muffin pan with foil baking cups, spray the cups with cooking spray.

Combine the egg substitute, cheese, peppers, onion and spinach in a bowl. Mix well, divide evenly among the muffin cups.

Bake at 350 for 20 minutes, until knife inserted in the center comes out clean.

Quiche cups can be frozen and reheated in microwave. (remove from foil cups first). Any combination of veggie and low fat cheese may be used.

Get creative.

each cup: 77 Calories, 3 total fat (2 g sat), 10 mg cholesterol,
3 g carbohydrates, 9 g protein, 2 g fiber, 160 sodium.

Thank you 1hobbit for posting the recipie for crustless quiche it looks deliscious. I look forward to trying it except that I will use full fat cheese in place of the low fat. I will let you know how it turns out.

Default crustless quiche

I hope you do like the quiche. I am sure the full fat cheese will work fine. I need to lower my cholesteral, that is why I use the low-fat cheese. Congratulation on losing 28 pounds, you are at my goal of 115, sur hope I can do that good.
