Default zuchinni alfredo

I had seen this as a tip in a book or another site, but hadn't tried it until this week. Incredibly easy, and so yummy that you'll feel you're cheating.

1 medium zuchinni (or yellow long summer) squash

A jar of Five Brothers alfredo sauce (other brands, check label for carbs)

Take a vegetable peeler and make long zuchinni "noodles" out of the zuke.
Boil "noodles" in water for 2 minutes. While they're draining, heat the bottled sauce in the same pan. Mix two ingredients together. eat.

With 1/2 cup of sauce, the carb count is 12 for the whole recipe--so not an induction meal, but for OWL, perfect, and a half serving is fine on Induction/PP Phase I.

And if you're a gourmet chef, you can of course make your own alfredo sauce with cream and good cheese...but the bottled stuff is quite good.

Thanks for posting this. I tried it today, and it was fantastic! I used a tomato sauce instead of alfredo, but man oh man: I think zucchini is going to be a staple in my kitchen from now on!

This sounds awesome! I love zucchini and who doesn't love alfredo? LOL! I'm wondering, though...could you add some chicken to it for chicken alfredo??? Or spaghetti squash instead of zucchini? I've GOT to give this a try!
