Default Pork with Lemon, Thyme cream sauce WOW!

I just made this recipe from Karen's book. Wow! It was great. I had left overs today with spinach and some of that sauce poured on the spinach. I was sad when my plate was empty. Ok, I even confess I licked my plate. I live alone, I can get away with it!

Karen's book is called "The Low Carb Gourmet". She posted some of the recipes here, but for others you should probably buy the book: http://www.lowcarb.ca/low-carb-recipes.html

If you decide to buy the book, you'll need to do so via Amazon or ebay or some other secondary book seller. I tried to buy it directly from the restaurant but they no longer have any.

Unfortunately, "The Low-Carb Gourmet" by Karen Barnaby is currently out of print . However, I see you're in BC .. I'd be willing to bet your local library has a copy you could borrow. This recipe is on page 216

You might check ebay for the book too. That's were I got my copy after discovering there were no new one for sale.
