Default Cultured Coconut Milk

I found this recipe online

Recipe

What I did was 1 can of Thia kitchen FULL fat coconut milk(all of it not just the solid cream portion) with 1/2 tsp of probitic powder.

I let it culture for 48 hours. Tried making ice cream messed that portion up...

But the cultured part worked really well and came out to a nice thick pudding consistancy was refrigerated.

Right now I am trying with 3/4 tspn and 1 can to see if I can get ti to come out to the consistancy between cream cheese and pudding... Just a little thicker...

But I thought for all those non-diary folks who like to make yogurt, or a ranch dressing you might enjoy this.

Update to this... It depends on the priobitic strength. When I used 1 tsp per full fat can of thai kitchen coconut milk. It came out slightly thicker than sour cream... Thickeness Inbetween cream cheese and sour cream.

I left it for 48 hours...in a dark cabinet...

Turned out real good...

This sounds really good! I've never used Probiotic powder. Are they basically all the same strength?

I have tried making coconut milk yogurt/kefir in the past and didn't really have much luck, but I was using yogurt cultures for it. I never really got the sourness I wanted.

I imagine you also need to get a coconut milk that doesn't contain any preservatives as those might kill the bacteria.

Hey Nancy, for me it is sour enough like sour cream.

I been making a mouse with it.

Next I am going to try making ranch dressing with it.

Kitann, I honestly don't know with the probiotic I bought. it didn't say strength so basically I tried 3 times. 1/2, 3/4 and finally 1 tsp.

And the 1 tspn worked for the probiotic I was using.

One thing I found though.

you need to shake it up 24 hours after it has been sitting. this seems to help with the bacteria growth...
