Does anyone know what the carbohydrate count is for coconut milk (I can't find it in the carbohydrate counters I've checked)?

From Corinne T. Netzers Complete Book of Food Counts:

Taste of Thai Coconut Milk: 1 cup - 8 grams carb - 0 fiber

If you don't have the book, get it. It rocks!

Also, the USDA data base on line:

http://www.nal.usda.gov/fnic/cgi-bin/nut_search.pl

These two sources are pretty accurate. I find the carb counts in Atkins books sketchy at best. For example, cheese. Cheese is not a free food. It has carbs. Eggs contain carbohydrates too.

Have you just started low-carbing?

Dear Karen, thanks for your responses to my fibre and coconut milk questions. So do I understand correctly that it's OK to use the "minus fibre" count for Atkins ?(By the way, the recipes look great - can't wait to try them.) As for carbohydrate counters, I have Natow & Heslin's "The Carbohydrate, Fibre and Sugar Counter" but it's not always that useful, so I'll get the Netzer book. And yes, I have been a lowcarber for about 5 weeks - it's great!

I do have another question (lots of questions at this point): some of the recipes in Atkins' cookbook use raw egg whites. Is this safe (I had understood that it was not safe to use raw eggs)?

Yes, it is OK to subtract fiber on Atkins.

As far as eggs go, yes, you can get salmonella from raw eggs. If you want to eat raw eggs it's a personal and health decision just like eating a medium-rare hamburger.

I personally could not give up making real mayonnaise, hollandaise or eating soft boiled eggs, but I wouldn't tell someone else to do it if it made them uncomfortable!
