Default Bawdy's Spinach Dip

You'll love this as a dip. Another way to eat it is to add a good dollop to your scrambled eggs while they're cooking. You won't believe how good this is!

Bawdy's Spinach Dip

1 cup ricotta cheese
1 pkg dried vegetable soup mix
1 pkg frozen spinach (10 oz), thawed
1 pkg (8 oz) Philly cheese
1 small jar diced pimiento
1/3 - 1/2 cup shredded Cheddar cheese

Mix everything together except the Cheddar cheese. Refrigerate for several hours or overnight for the flavors to blend.

When ready to serve, spoon out and spread out in a quiche plate or platter and sprinkle with the Cheddar cheese. Nuke on medium-high until hot and the cheese has melted. Start with a couple minutes and go from there.

Really ... try it in your scrambled eggs!

Do try it in your scrambled eggs. I can't tell you how good it is! I use a rounded tablespoon full (probably like 1/8 cup) for 2 to 3 eggs.
