Well I went into the kitchen this afternoon and was looking for a snack...I went through my fridge and figured out I could make this...pretty fast & easy. Try it!
Here's what you need:
2 low-carb whole wheat tortillas
1 Avocado - I used a California
Salt, Pepper, Mexican seasoning & cayenne pepper to taste
Mayo if desired
First, cut the tortillas into chips. I used the 3-net carb whole wheat tortillas and they made about 8-10 tortilla chip size pieces each. Next, heat up about 1/2 cup of vegetable oil (or canola oil) in a frying pan. I put it on medium heat...you don't want it too hot or the chips will burn.
When the oil is up to temperature, put one layer of chips in (do not double them up). Watch them carefully and flip the chips over after about a minute, then fry for another minute or so on the other side. Remove & place on a paper plate lined with paper towels to drain, allow to cool.
Guacamole:
Everyone has their own personal tastes for Guacamole, but here's how I make it...
Mash contents of 1 Avocado in a bowl. Add a little salt & pepper to taste. Then, add whatever seasonings you like. I used about 1/2 TSP of mexican seasoning and 1/8 teaspoon of Cayenne pepper. I also like about a TBSP of mayonnaise in my guacamole, but you don't have to have it. Mash it all up, then get your chips once they're cool and enjoy.
If you eat the entire bowl of guacamole and all the chips, it works out to about 9 net carbs and about 35 grams of dietary fiber depending on what brand of tortillas you use. Enjoy!
