Lightbulb A new 'egg' salad

I was rummaging through the fridge this morning for lunch items. I rounded up a container of cottage cheese, which only had a 1/2 cup left in it. Not quite enough for lunch. THEN..I got the idea to add a couple chopped up hard-boiled eggs to it, and my usual egg salad seasonings (onion powder, parsley, pepper, salt, and chives). Turned out to be pretty darn good - like super chunky cottage cheese (cottage cheese on steriods?? lol). I suppose I could have also added green onions, bacon, etc. - even yummier and even more protein.

You know, sometimes, I get weary of eating 'regular' egg salad - partly because I'm not always wild about the taste of mayonnaise. The final result of this experiment was an approximately 6 carb lunch/snack!

Sounds good....what a good idea. Next time i make egg salad i'll try adding cottage cheese in if i have it in the fridge! I do miss the taste of cottage cheese, i used to eat it with peaches or pineapple or pickled beet..you name it...man i miss it
