Default Stuffed, Wrapped & Roasted Jalapenos

Greetings all. Hope all you are having a fine weekend!

Well, four more lbs. this week! YEE HI !

Thought I'd post another West Texas delicacy that is legal and oh so good!

If you liked Jalapeno Poppers before the Atkins WOE but had to give'em up because of the breading, consider this.

Stuffed, Wrapped & Roasted Jalapenos!

Start with garden fresh Jalapeno Peppers

Cut the top (cap) of the pepper off and clean out the seeds and core of the pepper (leave some in if you want it hot, otherwise, they are not in the least bit hot)

Stuff with a mixture of: Cream Cheese, Cheddar Cheese, Goat Cheese, Fried Minced Bacon

Wrap each pepper with Prosciutto Ham

Grill until outside of peppers are starting to wrinkle and the stuffings are bubbling. (usually about 30 minutes)

Mmmmm mmm!

The Roaster is one of my own creations made by welding washers together and sticking legs and a handle on it. Works great!

Hi Paul,

I'm curious...do you think you could roll the peppers in ground pork rinds & then fry? This week I tried some chicken and some salmon patties with a pork rind crust & I was very inpressed with the results. Maybe it would work for the bombers....just thinkin' out loud.

How incredibly brilliant! You should sell them. It looks like they would work well in an oven too.

Greetings fellow LC'ers! Sorry I haven't repied to some of the posts but I've been oh so busy at work.

First off, TANK, how did those poppers breaded with pork rinds work? I'm really anxious to hear about your results!

Karen, I take your comments as a compliment especially since I KNOW what an accomplished chef you are. BTW, even though I have not said anything before, you have been a great inspiration to me! Thank you for the kind words on my jalapeno roaster. I HAVE thoght about selling them but only momentarily.. Having too much fun with it to start worrying about doing it for pecuniary gain.. LOL! And yes, it works great in the oven.

And to all, I REALLY hope that you will post YOUR results! I'd love to hear about them!

Could you post a picture of the Jalapeno Roaster without the jalapenos, I am a grill fanatic and would like to try and make one of these for myself! Any specs on the roaster would be helpful, too.

My question is how in the world would you roast the jalapenos WITHOUT that wonderful roaster?? All the cheese would melt out!! Well, Paul.... you at least gotta make a few more and sell them to us!! Looks delish! Mmmmmmmmmmmmmm.

Wow... What a response.

If you folks are serious about the roasters, I'll take a serious look at it. I really never intended for it to be a commercial endeavor but I am seriously flattered and sure don't mind helping my friends on the LC Forum out.

Since I am hand building them, it's kind of labor intensive. There is about $10 of materials and it takes me about 1.5 hours per roaster, 2 by the time I get them cooked in. Does $25 sound OK?

If so, how about a show of hands. I guess this is where the rubber meets the road. :LOL:
